Lilac Syrup

Ingredients:

  • 4 cups fresh lilac florets

  • 2 cups sugar

  • 2 cups water

Directions:

  1. Harvest​ a few bunches of lilac, choosing flowers that are fresh and blooming. 

  2. Remove florets from green stems.

  3. Clean florets by rinsing them in a fine-mesh strainer.

  4. In a small saucepan, combine sugar and water over medium heat. 

  5. Add the lilac florets, stir gently, and reduce heat and let simmer for 5 minutes, covered. 

  6. Remove mixture from heat, keep it covered and let it steep for 3-8 hours. 

  7. Strain florets out of syrup with a fine-mesh strainer. I like to store my syrup in a recycled glass container with a cover that can screw on tight. Refrigerate and enjoy! Add to drinks or drizzle on pancakes. Syrup will last up to two weeks in the fridge.
