Lilac Syrup
Submitted by Sarah Amado
Ingredients:
-
4 cups fresh lilac florets
-
2 cups sugar
-
2 cups water
Directions:
-
Harvest a few bunches of lilac, choosing flowers that are fresh and blooming.
-
Remove florets from green stems.
-
Clean florets by rinsing them in a fine-mesh strainer.
-
In a small saucepan, combine sugar and water over medium heat.
-
Add the lilac florets, stir gently, and reduce heat and let simmer for 5 minutes, covered.
-
Remove mixture from heat, keep it covered and let it steep for 3-8 hours.
-
Strain florets out of syrup with a fine-mesh strainer. I like to store my syrup in a recycled glass container with a cover that can screw on tight. Refrigerate and enjoy! Add to drinks or drizzle on pancakes. Syrup will last up to two weeks in the fridge.
